Bavarian Sausage With A Yorkshire Twist

Wakefield’s first Bavarian Oktoberfest has taken place featuring Yorkshire’s own homegrown Bratwurst style sausage.

The sausage was developed and made by award-winning wholesale butchers and pie makers Eric Richmond Ltd at the request of Unity Works which hosted the Bavarian evening.

John Horvarth, Executive Director of Unity Works Wakefield Ltd, said it was important to get the flavour of the sausage exactly right to ensure a balance with the Bavarian beers that were served in two pint Steins accompanied by live music from the Burgermeister Oompah Show.

“We’ve partnered up with a brewery to get the right beers and it was essential that we had a sausage that was as close to the meaty Bavarian bratwurst as possible to ensure the correct balance of flavours to accentuate the evening,” John explained.


“We have worked with Tom Martin at Eric Richmond Ltd before when supplying high quality food for events at Unity, so we set him the task of developing a sausage that measured about six inches in length when cooked, with a flavour as authentic as possible to the Bavarian Bratwurst, and he didn’t disappoint.”

John added: “I love that Tom likes to experiment and was willing to have several attempts at getting the taste exactly right. We served the sausage in bread cakes with a choice of mustard and it went down a storm – after all some 200+ revellers can’t be wrong!”

Tom Martin, MD at Ossett based Eric Richmond Ltd, said he was delighted to have the chance to develop an authentic Bavarian style bratwurst made up of Yorkshire ingredients.

“We pride ourselves on our Yorkshire heritage and only using the best, local produce in our food so to have the chance to do this to meet a bespoke need was right up our street,” he said.
